This makes a great dish for vegetarians as well as meat lovers.
Serves 8 to 10
Preheat oven to 350 degrees
2 10 Oz Packages of Frozen Chopped Spinich, thawed and drained.
1 Onion chopped
2 Cloves garlic, minced
8 Tablespoons melted butter
6 Eggs beaten
16 Oz Cottage Cheese
2 Tablespoons all-purpose flour
1 Pound Sharp Cheddar Cheese, grated
Salt and Pepper to taste
Lightly grease a 13 x 9 baking dish.
Saute’ onion and garlic in 2 TBLS of the melted butter.
Mix spinach with eggs, cottage and cheddar cheeses, flour and the remaining butter.
Add sautéed onions and garlic.
Season with Salt and Pepper.
Pour into prepared dish and bake for 1 hour.
